Beetroot Dip

The tangy and fresh flavour of this beetroot dip makes it a perfect healthy starter. It can turn out a little runny, so make sure you drain the beetroot well – I used some paper towel on a plate to soak up excess moisture.

Ingredients
  • 425g can beetroot slices, drained
  • 1 tsp ground cumin
  • 1/2 tsp garlic
  • 1 tsp coriander
  • 1 tsp lemon juice
  • 1/3 cup plain yoghurt or feta cheese
  • Salt and pepper, to taste
Method
  1. Process all ingredients until smooth. Taste, and add salt and pepper if needed.
  2. Serve with crackers or toasted pita bread.

Basil Pesto

I absolutely loooove pesto. The combined basil, nuts and cheese create the perfect full texture and enticing flavour. This pesto is great to be used as a dip, but can also be used in a risotto or instead of a tomato base on pizza!

Ingredients
  • 1 cup fresh basil leaves
  • 1/2 cup rocket
  • 
1/3 cup nuts (use pine nuts, cashews, walnuts, or macadamias)
  • 2 tsp garlic
  • 1/3 cup grated parmesan cheese
  • 
1/4 cup olive oil
  • 1 tbs of lemon juice
  • Salt and pepper, to taste
Method
  1. Process ingredients until almost smooth.
  2. Transfer to a bowl. Season with salt and pepper. Stir to combine.

Hommus

Everyone loves hommus, right? I’m going to admit I’m a little famous between my friends and family for this hommus recipe which I’ve perfected through countless times of making and editing it! It’s inexpensive, and makes a large quantity.

Ingredients
  • 400g canned chickpeas, rinsed and drained
  • 1/4 cup olive oil or vegetable oil
  • 1 tbs tahini or sesame seeds
  • 1 tbs coriander
  • 1 tsp cumin
  • 1 tsp garlic
  • Salt and pepper, to taste
Method
  1. Process ingredients until smooth. If necessary, add more oil (or water) until dip is a nice consistency.
  2. Taste, and add salt and pepper if needed. Serve with carrot sticks or toasted pita bread.
